Hey friends! Tonight’s dinner is brought to you by my husband!
He smoked a pork loin for us. And we also had loaded mashed potatoes that I put together.
I made a post a while back about buying a pork loin from Sam’s Club and cutting it into portions for different meals. This is one of those meals. We slathered it in mustard and covered it with some seasoning and just set it on there for a couple hours. It turned out so good. We have a Weber Smokey Mountain smoker, and it works so well.
To round out the meal I put together this side dish of loaded smoked mashed potatoes from Or Whatever You Do. OMG, these are my most favorite way to have mashed potatoes now. The smokey flavor came through from a short amount of time on the smoker. Truly superb.
I didn’t have any bbq sauce on hand, but tried this recipe from Add A Pinch. I don’t think I’ll be able to buy sauce any more. It was such a good complement to the meal, yum!
The second night we thought it would be good to have some bread. I will only use this recipe for French bread from One Dish Kitchen. If I need 2 loaves, I’ll double it. This recipe is perfect and turns out consistent every bake.
So, something about me that you can probably gauge from this post is that I do not come up with recipes on my own. There may be a few here and there that are amalgamations of things I’ve tried that I think will work well together; but for the most part I’m finding someone else’s recipe to make.
It’s how I like to cook. I’ve mentioned before that I’m not that creative, and that’s okay. There are plenty of people out in the world who can make amazing dishes and provide the recipes for people like me.
