Hi friends! I’m back with another meal for you! These are not my recipes, but ones that I found on the internet and tried, and am here to tell you about. File under updates you never asked for.
Tonight’s dinner was Big Mac smashed tacos, and I served them with fries (of course).

First off, ever since I tried making tortillas, it feels stupid to buy them so I made them for this meal. Here’s the recipe from The Cafe Sucre Farine. I prefer this recipe because it calls for neutral oil, which is my personal preference. I wanted mine to be a little smaller for this particular recipe so I portioned 24 instead of 16. It worked perfectly.
Also regarding the tortillas: a lot of times you’ll see that you should roll them out rather than using the tortilla press. If you’re making larger ones that may be the case. However, I found while making these smaller ones that I was able to use my press (like this one) to make perfectly thin tortillas. (affiliate link) The trick is to rotate it and press a couple times. Just a little tip from me if you don’t want to roll them out!
For the mac sauce I followed this recipe from Daring Gourmet. I did omit the onion because I made this recipe with leftovers in mind and didn’t want the flavors to be too overpowering as it sat overnight. I added a little extra onion powder to compensate. In my opinion, this is the closest dupe that I’ve found. It was so good.
I roughly followed this method for the burgers from Mary’s Whole Life. Looking at the photo I realized I forgot to add the pickles to mine, but that I can remedy tomorrow.
I used ground chicken instead of beef because it cost about 1/2 the price per pound, and my budget needed a break. I seasoned the meat with the smash burger seasoning from McCormick. Big Mac smashed tacos hit the craving without feeling overly heavy. I’ll definitely come back to it in the future.
