Hey friends! Here’s what’s for dinner!

My husband loves these easy and delicious burnt cheese tacos from Simply Recipes.

They are so easy and quick to put together. Unless you’re like me and insist on making your own tortillas. Then they take slightly longer, but the results are delightful.

In the interest of full disclosure, I don’t use as much cheese as specified in the recipe. My husband counts calories because he has goals, and I’m trying to be more mindful of my portions.

Because of this, I only used about 1/4 cup of cheese for each taco.

Burnt cheese tacos are a definite go to when I need a budget friendly meal for the week.

I like to pair it with Taste Better from Scratch’s Mexican style rice. (I omit the peas and carrots because my kids are picky but when I tell you that my husband would gladly eat that rice everyday, I’m not being hyperbolic.)
