Hey friends! This edition of Cooking Through My Books is Taco Taters from the Keep It Simple, Y’all cookbook.

I loved this recipe. It was super budget friendly, and surprisingly filling.

I did deviate from the recipe in a few minor ways. I used lean ground chicken because at half the price of ground beef, it was a no brainer. Also, as a family we prefer air fried potatoes vs pan fried when making family sized batches so they get nice and crispy.

Topped with ripe avocado (hit the jackpot and got 2 good ones!), salsa, sour cream and cheese and it was a flavorful family friendly dinner.

Taco Taters probably won’t get added to our monthly list, but it is definitely a recipe that I’ll come back to in the future.

This is only the second recipe that I’ve made from Matthew Bounds’ cookbook, and Taco Taters is definitely the front runner of the 2.
