Hey friends! In an effort to actually follow through with one thing I’ve said here, I made a recipe from a cookbook I own tonight!

My goal is to try to find meals my family loves without resorting to the easiest thing of scouring the internet to find something. I’m really trying to not be on my phone so much (and failing in a shockingly bad way) but I digress.

Tonight I chose a recipe from Rachael Ray’s 2,4,6,8 cookbook (affiliate link) : Chicken Parm Pizza.

In the interest of full disclosure, my kids were mad when I told them this was a cook with your kids recipe, and I didn’t ask them to make it with me. So if you’ve got kids and try this one – definitely ask them to help.

My Review : Chicken Parm Pizza

I’m going to be brutally honest with these reviews, because otherwise what’s the point.

My husband took a bite and described it more as Sloppy Joe Pizza rather than chicken parm. The flavors that I was hoping would come through and be pronounced were really not.

Don’t get me wrong, it was still good. Just didn’t pack that classic flavor profile.

I do love how easy the topping came together though. And it didn’t feel too heavy and greasy.

I made the pizza dough using this recipe. It’s advertised as thin crust, but I have no idea how to stretch pizza dough so it stays stretched. That worked out in my favor tonight though because this filling was so heavy in weight that it would have destroyed a thin crust I think.
