I confessed in an earlier post that I am not creative when it comes to making up recipes. Well, this is the exception to that rule. These are my “gyro” inspired meatballs. I call them that because I stuff them with feta, and season with steak seasoning. When you combine them with the garlicky tzatziki sauce, they truly do remind me of a gyro. (Yes, I know that gyro’s do not typically have feta on them, but I wanted a substitute for parmesan.)
To make them I combine ground turkey, panko, an egg, parsley, steak seasoning, a little Worcestershire sauce, salt, pepper, and feta in a big bowl, and just mix. I like to serve these with tzatziki sauce which you can make by just mixing greek yogurt, finely diced cucumber, a hint of lemon juice, garlic, salt, and pepper. (You may need to add a pinch of sugar just to balance out the tang a bit.)
I make fresh pita and hummus, which I highly suggest if you are into that sort of thing. Just search for recipes for both, and you’ll find recipes that fit your tastes and can be catered to what equipment you have in your kitchen (i.e. – food processor, stand mixer, etc.).
