I know I promised that I’d share my meal plan with you all this week – but, I failed spectacularly at that! Turns out I’m really no good at this consistent blogging thing. 😅
I will try harder to do better from here on out.
For the past few nights we have had chicken pot pie that I made from no recipe. It’s basically just a culmination of any that I may have eaten in the past.
Sauté some veggies in butter – you can use whatever you like. I used carrots. celery, onion and some garlic. Then added flour to make my roux. Enough liquid to cover. I loooove diced potatoes in mine, so I added probably 2.5 pounds worth and let it simmer for a bit until they were tender. Then added in the chicken and a handful of frozen peas. As for seasoning, I only used salt, pepper, a bay leaf, some poultry seasoning and a little dijon. After my chicken cooked in the Instant Pot, I added a little soy sauce and Worcestershire sauce just to give it some of the savory goodness those 2 sauces provide.
My go-to pie crust is Ina Garten’s Perfect Pie Crust. Mine does not look pretty because I cannot for the life of me figure out how to roll things into a circle, but the recipe as a whole is foolproof. It comes together so quickly in the food processor and turns out so flaky and delicious every time.
Tonight We’re Having –
Pulled pork sliders made in the IP and served on Hawaiian rolls. For sides I’ve got pre-made potato salad and frozen onion rings. This was supposed to be a meal for tomorrow while watching football, but I completely forgot that the Dolphins played Thursday so it messed with the order of my meals.
We will have Rachael Ray’s Neapolitan Baked Ziti. It is a favorite around here, and personally my all time favorite pasta recipe.
Will be green sauce enchiladas. I found a sauce recipe from Tyler Florence that uses tomatillos, so I will make some cheesy chicken enchiladas and rice as a side dish.
What are you making this week? My weeks tend to end on Wednesday or Thursday because that is when I do my shopping.
