Hi friends! Quick update on a crowd pleasing dinner from this week : Build Your Own Burritos.
I diced 2 large chicken breasts, then put into a bowl with a lot of seasoning, a little bit of cornstarch, some diced red onion, and 2 cloves of minced garlic. (The cornstarch helped it get nicely browned and crispy.)
Sautéed in batches until cooked through, then added it all back into the pan to keep it warm until serving.
Meanwhile, in a sauce pan I sautéed a little bit of red onion, a clove of garlic and a cup of jasmine rice in some olive oil until the rice started to get a little toasty. Then I added 2 cups chicken broth, and some salt and let cook with the lid on. After it was cooked I added some chopped cilantro and the juice of half a lime along with some more salt, as needed.
I also made some guacamole, and served the burritos with the guac, rice, chicken, salsa, sour cream and cheese allowing everyone to make their own per their personal tastes.
Leftovers taste great for lunch the next day as well!
