Cookbook Cook-through : Paprika Chicken Stew

Good morning, and happy Monday friends.

I hope that you are all staying safe and healthy. ♥️

I’m continuing with my adventure of cooking through the books and magazines I own, instead of grabbing random ones off the internet.

Over the weekend I made Rachael Ray’s recipe for Paprika Chicken Stew with Potato Pierogies.

I did make an adjustment with how it called to be cooked. I made mine in the instant pot because #quarantinelife – by the time I decided what was for dinner there was no time to defrost the chicken.

With a delightful combination of bacon, carrots and tomato with the addition of the chicken and spices – this recipe was a total home run in my book.

When you add the pirogies on top, this was a soul satisfying meal. (At least for my husband and me – the girls wouldn’t eat it. 🙄)

If you can grab a copy of “Just In Time” by Rachael Ray and cook this recipe, I have no doubt that it will become a favorite of yours as well.

Will definitely make this again.
