Hi again friends! It’s Tuesday here in my world, which means it’s eGroup night!
This means that I rely on more time friendly meals. Well, last night was a home run for sure. I found a recipe for Chorizo Fried Rice in the April 2018 edition of Rachael Ray Every Day magazine.
It turned out so great, and was whipped up in no time.
A mixture of yellow rice, beans, chorizo with spices and veggies made for a meal that satisfied my Chinese takeout craving. (I served it with frozen egg rolls and crab Rangoon that I threw in the air fryer.)
Overall, if you happen to have a copy of that magazine lying around – I’d 100% recommend that you make this meal.
It was mostly family approved, my kids didn’t clear their plates but they ate enough to not need an immediate snack after. I call that a win.
And, since as I mentioned that tonight we’re hosting eGroup for church – I will be making this dinner as a repeat tonight.
