Hey friend! I hope you are doing well today. I just wanted to hop on and let you know what we had for dinner tonight, and perhaps give you a little inspiration for the future.
I’d never used cauliflower rice before because, well…I tried the cauliflower pizza crust a while back and it did not go well. So I’d been putting it off.
But lately, it seems like everywhere you turn you run into cauliflower something. So tonight, I gave it a whirl.
I mentioned to my daughter’s what it was – but it must not have clicked because neither of them questioned me. (This is a rare occurrence if there’s even a hint of something that they think they won’t like.) Needless to say, both of them cleared their plates and our youngest even had extra…which is basically unheard of.
I used this recipe from delish.com, but adjusted towards my family’s taste. I left out the carrots, only added a handful of peas and did not add the scallions. Obviously the biggest change was using the riced cauliflower, and I used boneless/skinless chicken thighs.
My version turned out very tasty – but I cannot attest to the original recipe as I used that only for my inspiration.
So, if nothing else, I hope that this will encourage you to try something new when it comes to your menu planning. I know how easy it is to get stuck in a rut – and this meal helped pave the way to bust out of ours.
