Ham & Bean Soup

Hi friends! As promised in an earlier post, I am going to post an easy to put together dinner – Ham & Bean Soup.

Tonight we had it for dinner after I let it cook in the slow cooker all day. Here’s how I did it.

Ham & Bean Soup

First I sautéed a pound of carrots, (you can add celery if you like it, I don’t) a small onion, and 2 cloves of garlic in some olive oil. I also added some salt (watch what you add here – chicken broth and ham are both salty, too!), pepper, dried thyme and a bay leaf.

I cooked all of that together until it was just softened.

(You can totally skip this step and just throw it all in the slow cooker, but I personally feel like it adds a little bit more flavor that sometimes the slow cooker can mellow too much.)

In the meantime, I drained and rinsed 3 cans of white beans then added to the slow cooker insert.

To the beans, I add the cooked carrots and onions, and then set the ham bone right on top. I added 3-4 cups of chicken broth.

Cover and slow cook until you’re ready to eat! Don’t forget to remove the bay leaf.

My ham bone had a lot of meat on it, so I used tongs to shred it off the bone.
