Hi friends! Quick update my meal plan for this week.
Tonight was potato soup. This recipe is inspired by a recipe by the website/blogger Damn Delicious, only slightly modifying it so that it suited our needs a little bit better. I did not deviate from the ingredient list though, except to add a little sprinkle of smoked paprika at the end.
I also chose to run a couple ladlefuls through the blender to create a little silkier of a texture.
Next Up on the Meal Plan :
We will be having leftovers tomorrow night, and then the following 2 days I’m going to be making a very simple chicken fried rice and serving frozen egg rolls.
My method for the fried rice is as follows : Also – please don’t come at me – I know it’s not traditional. It’s what works for me.
Cook some rice (I use jasmine) and let it sit over night in the fridge.
When ready to cook heat some oil in a pan with a small onion and a couple cloves of garlic. Add in some diced chicken and season with salt, pepper, a small sesame oil, garlic salt and whatever else you like.
When that is all cooked turn the heat up and add the rice to the pan and cook until browned and fragrant. I like to add some soy sauce at this point. When that is finished – I make a well in the center and add a little bit of oil and a couple of eggs that I’ve thoroughly whisked in a bowl and stir constantly until they are cooked through. Then I mix everything together and serve hot.
This tastes better the next day IMO.
Obviously you need a big skillet for this, and I love this one from T-fal. It’s got a giant cooking surface, is incredibly nonstick, can withstand most metal utensils and the dishwasher. (That checks all my boxes!)
Since Eric isn’t home to eat during the week, I keep it very simple for the girls and me. The simpler the recipe with the least amount of ingredients is best.
